The Protein Quality report shows the amino acid score for your Recipe. The amino acid score helps identify a food as containing complete or incomplete protein.  The Protein Quality report shows actual versus ideal ratios of amino acids scored as percents, as well as the limiting amino acid in the food list.  The limiting amino acid is that with the lowest individual percent listed.  

If any of your ingredients are missing amino acid data, that will affect the amino acid score.  It is good practice to review the Spreadsheet report, including amino acids, for missing values.

If you know the actual ratios for your Recipe, perhaps from lab analysis of your product, you can use the "Manual Update" option to override the calculated values.

The Ideal Ratio is based on the “Report of the Joint FAO/WHO Expert Consultation on Protein Quality Evaluation" as outlined in the CFR.
