The program is pre-populated with U.S. food allergens. Allergens can also be added to the program through this option. User-entered allergens can be edited/deleted. The pre-populated allergens are maintained by ESHA and so cannot be edited/deleted. Allergens can be assigned to individual ingredients and formulas.
