ENERGY
The Energy amount can be calculated in one of three ways:
Unrounded: Unrounded nutrient values are used in the Energy calculation.
Rounded: Rounded nutrient values are used in the Energy calculation.
Aggregate: Energy values will be calculated by adding the energy values in all the foods associated with the label and using that as the energy value for the label.
Voluntary Nutrients
Here is where you will find the available options for the individual voluntary nutrients you wish to display on your label.
Voluntary nutrients are just that — voluntary — unless you make any sort of related nutrient claim on your label. Example: “High in Vitamin C.” When you make a claim, you must display the nutrient on your label.
As with some mandatory nutrients, you can choose how some voluntary nutrients should be displayed on the Label if they are present in insignificant amounts. These are:
mono-unsaturates
polyunsaturates
polyols
starch
Fibre
The remaining nutrients can only be shown or hidden. They will have no additional display options.

EU Label: Ingredient/Allergen Statement Options
ALLERGENS DISPLAY
In the EU, allergens are wrapped into the ingredient statement. In the cases where an ingredient is also an allergen, it can be displayed either alone and bolded or after then ingredient.
Like so: Whipped Cream (cream, sugar, salt) (Milk), Walnuts (Walnuts)
A checkbox in the Ingredient Statement editor controls this.
